Test Kitchen: Angel Food Cupcakes

This weekend I’ll be testing in the kitchen with Angel Food Cupcakes, requested for a wedding next month. Testing is one of my favorite things to do; trying out variations, tasting each version and hopefully getting a winner out of it all in the end.

Triple-Citrus Cupcakes

This weekend I was hired to cater cupcakes to a private dinner party. I was thrilled when the hostess (my sweet Mom!) asked for something “maybe orange” to pair with her roast chicken. I suggested these delicious Triple-Citrus Cupcakes.

I was surprised she didn’t want something chocolate but I was really excited because I knew she (and her guests) would love these cupcakes.

They remind me of summer, warm evenings and cool drinks and that delicious smell of citrus in the air.

These cupcakes are made with freshly zested orange, lemon and lime. You pick which one you want to be the star – we went with orange – and the sweet yummy citrus glaze is the perfect – if not a little messy – icing. This cupcake is worth a few sticky fingers (or use a fork and plate).

These are one of my new favorites – chocolate malt cupcakes with chocolate malt buttercream, topped with a Whopper. And while these would make great Valentine’s treats, these aren’t the ones I’ve promised to come!

The holidays sure were a busy time and I haven’t posted in about forever! I’ll have some new photos to share soon, some Valentine cupcakes coming your way this weekend.

I’ve been hired to do cupcakes at another wedding in April, looking forward to that. Planning with the bride on flavors right now.

I’m also catering cupcakes to a few other events including my brother’s Eagle Scout Court of Honor in May and a private dinner next month.
